Every bean passes
through our hands.
We buy the harvest green and roast it in the café itself, so we know the age of every bean in your cup and how to brew it.

Origin
Harvests from farms and washing stations we know in Ethiopia, Colombia, Yemen and Brazil, arriving green in burlap sacks.

Roasting
We roast 12 kg batches every morning, pulling the sample again and again to follow the colour and aroma to the roast that suits each lot.

Cooling & resting
The beans cool in a rotating tray within four minutes, then rest at least two days before they reach the grinder or your bag.

The cup
We weigh every dose and set the grind and temperature for each lot, so the bean reaches you tasting as it left the roaster.
